Lautus, Latin for pure, elegant, and sumptuous, was the first dealcoholized wine, launched in South Africa back in 2017. It was founded by Reg Holder, who is also the winemaker. Their wine-making practices are very traditional. They use cutting-edge technology and techniques to dealcoholize the wines.
Certain grapes for the Savvy Red are picked early to provide optimal acidity, while the rest are harvested at their peak point of ripeness. The wine is then aged for 9-12 months in oak barrels before being twice passed through a gentle spinning cone technology: once to capture and preserve the wine’s aromas and flavors, and again to remove the alcohol content. It is rich, supple, and elegant with fine tannins and juicy yet subtle fruit. The palate provides lots of red and black berry fruit and touches of spice and oak. There's enough structure and tannin to match it with a medium-rare roast beef.
