Au Bon Climat Chardonnay

Jim Clendenen, 'The Mind Behind' Au Bon Climat has been considered one of the greatest winemakers in the world for decades, primarily regarding the Burgundian efforts he has produced under the Au Bon Climat label since 1982, but also for the newer, more experimental bottlings he produced under the Clendenen Family Vineyards.
The grapes were sourced from five carefully farmed vineyards whose vines average more than 25 years. Primary and malolactic fermentations occurred in barrels. The wine was aged 8 months sur lie in neutral François Frères barrels.
The wine is balanced, elegant, full-bodied, creamy, and structured with bright acidity. It features flavors of grapefruit, lemon zest, pear, apple, peach, nuts, butter, and baker's yeast. Amazing match with a spicy salmon poke bowl.
